While the husband was deployed last year I lived with five girls. Being able to live with these lovely girls turned out to be such a blessing. I loved being surrounded by people all of the time and we ended up making many wonderful memories. During the year we made a point to celebrate each season and had many holiday parties. One of my roommates made oatmeal pumpkin cookies for one of these parties and I was instantly hooked! She was kind enough to share the family recipe. I had so much fun making these cookies this year and sharing them with the hubby. He is quite the fan of them as well!
The recipe:
Mix together:
1 cup butter
3/4 c. Brown sugar
3/4 c. Sugar
1 cup pumpkin
1egg
1 tsp vanilla
1 3/4 c. Flour
1tsp. Baking soda
1 tsp. salt
1 tsp. cinnamon
2 1/2 c. Oatmeal
Bake @ 350 for 11 minutes
Icing:
1 tbsp. milk
1/2 tsp. vanilla
2 1/2 c. Powdered sugar
